The results showed that the production process of Daqu could be divided into three stages based on temperature, and different microorganisms played different roles in each stage. Environmental factors such as humidity, CO2, and moisture had significant effects on the microbial community.

Differences in structure, volatile metabolites, and functions of microbial communities in Nongxiangxing daqu from different production areas

Summary: This study found differences in the microbial community structure, potential functions, and volatile metabolites of Nongxiangxing daqu samples from different production areas in China. Certain microorganisms could be considered as biomarkers for discriminating daqu origin. Additionally, differential metabolites were identified, and co-occurrence network analysis revealed correlations between differential microorganisms and volatile metabolites in daqu. Function prediction and pathway enrichment analysis further highlighted differences in the functions of daqu samples, particularly related to amino acid metabolism, fatty acid metabolism, and carbon metabolism.

Comparative analysis of the microbiotas and physicochemical properties inside and outside medium-temperature Daqu during the fermentation and storage

Summary: This study investigated the microbial community and physicochemical indices of medium-temperature Daqu (MT-Daqu) during fermentation and storage. The results showed significant variations in the microbial community during fermentation, while relative stability was observed after 3 months of storage. Moreover, there were differences in microbial communities between the inner and outer layers of MT-Daqu. The mature MT-Daqu was found to contain abundant pyrazines and alcohols as volatile aroma compounds.

Fungal community structure and function shifts with atmospheric nitrogen deposition

Summary: Fungal decomposition of soil organic matter is influenced by soil nitrogen availability, which is in turn impacted by atmospheric nitrogen deposition. Changes in nitrogen inputs have led to shifts in fungal communities, with some showing increased biomass and richness in response to nitrogen deposition while others exhibit reduced oxidative enzyme potential. Fungal communities respond differently to simulated nitrogen deposition based on ambient nitrogen levels, indicating a complex relationship between nitrogen enrichment and fungal community structure and function.

Biochemical and synergistic properties of a novel alpha-amylase from Chinese nong-flavor Daqu

Summary: This study identified a novel GH13_5 fungal alpha-amylase (NFAmy13B) from Nong-flavor (NF) Daqu, which showed outstanding alkali resistance and high specific activity. NFAmy13B exhibited a synergistic effect with another alpha-amylase NFAmy13A (GH13_1) from Daqu in degrading wheat starch. The enzymes showed different catalytic efficiencies on starch and maltooligosaccharides, possibly due to their discrepant substrate-binding regions.
