Dynamic change of tea (Camellia sinensis) leaf cuticular wax in white tea processing for contribution to tea flavor formation

Summary: Despite previous studies on tea leaf cuticular wax, little is known about the changes in component and its relation with tea flavor quality during dehydration and withering treatments in tea processing. Our study showed that tea leaf cuticular wax changed drastically and affected tea flavor formation during tea leaf development, dehydration, or withering treatment. Caffeine was identified as a major component in leaf cuticular wax, and its content increased during dehydration and withering treatments.

Comprehensive analysis of carotenoids constituents in purple-coloured leaves and carotenoid-derived aroma differences after processing into green, black, and white tea

Summary: This study accurately quantified 3 carotenes and 16 xanthophylls in 15 tea cultivars with leaves of different colors. The tea processing decreased the tea carotenoids by more than 65%, promoting the production of volatile apocarotenoids. Purple tea products were found to contain 25 crucial carotenoid-derived aroma compounds, with alpha/beta-ionone and their derivatives and dihydroactinidiolide accounting for more than 50% of total volatiles, contributing to the fruity aroma in purple tea products.

Multi-omics and enzyme activity analysis of flavour substances formation: Major metabolic pathways alteration during Congou black tea processing

Summary: To analyze the formation of flavor substances in Congou black tea, both non-volatile and volatile compositions were analyzed, along with enzymatic activity. Using UHPLC-Q-Exactive/MS and SBSE-GC-MS techniques, a total of 107 non-volatile and 222 volatile compositions were identified, and eight metabolic pathways were explored. Significant variations in metabolites were observed, especially during fermentation, with high accumulation of taste and color substances. Mutual transformation between non-volatile and volatile substances was found in certain types of processing. This study provides a detailed overview of the dynamic changes in flavor substrates and key enzyme activities during Congou black tea processing.

Improving the flavor of summer green tea (Camellia sinensis L.) using the yellowing process

Summary: The present study aimed to improve the poor flavor of Summer green tea (SGT) by yellowing process. The results showed that the yellowing process increased the sweetness and overall acceptability of SGT, and decreased the bitterness and astringency. The concentration of certain aroma compounds changed after yellowing, resulting in grassy, floral, fruity, mushroom, and sweet aromas. Addition of selected aroma compounds further enhanced the sweetness and umami of SGT, demonstrating the improvement of flavor through odor-taste interactions.
