Effects of superfine pulverization technology on the morphology, microstructure, and physicochemical properties of Apium graveolens L. root

Jing Sun et al.

Summary: The characteristics and properties of Apium graveolens L. root powders with different particle sizes were studied. It was found that superfine pulverization changed the shape and surface morphology of the powders, and as particle size decreased, the moisture and oil-binding capacity decreased while the total ash content, water solubility index, swelling capacity, water-holding capacity, and antioxidant activity increased. The study provides a theoretical basis for the development and application of new Apium graveolens L. root products.
