Optimising the Polyphenolic Content and Antioxidant Activity of Green Rooibos (Aspalathus linearis) Using Beta-Cyclodextrin Assisted Extraction

Lusani Norah Vhangani et al.

Summary: This study optimized the beta-cyclodextrin-assisted extraction of crude green rooibos, finding that the optimal conditions were 15 mM beta-CD: 40 degrees C: 60 min, resulting in high polyphenolic content and antioxidant activity. Aspalathin, hyperoside, and orientin were identified as the major active compounds.

Reaction pathways and factors influencing nonenzymatic browning in shelf-stable fruit juices during storage

Carolien Buve et al.

Summary: The occurrence of nonenzymatic browning in fruit juices during storage is a major quality defect that affects consumer acceptance and shelf-life. The main reactions involved in nonenzymatic browning include ascorbic acid degradation, acid-catalyzed sugar degradation, and Maillard-associated reactions. Factors affecting nonenzymatic browning include juice composition, pH, oxygen availability, and storage conditions.

Investigations on the formation of α-dicarbonyl compounds and 5-hydroxymethylfurfural in fruit products during storage: New insights into the role of Maillard reaction

Isil Gursul Aktag et al.

Summary: The formation of alpha-dicarbonyl compounds and 5-hydroxymethylfurfural in fruit products was studied, and amino acid adducts were confirmed using high-resolution mass spectrometry. Changes in concentrations of sugars, amino acids, alpha-dicarbonyl compounds, and 5-hydroxymethylfurfural were monitored in fruit juice concentrates and dried fruits, with 3-deoxyglucosone identified as the major compound during storage.

Kinetics of heat-induced changes in foods: A workflow proposal

M. A. J. S. van Boekel

Summary: The goal of kinetic modeling is to increase scientific understanding of the process under study and to predict product properties. The traditional two-step kinetic analysis method has its limitations, and a new workflow using nonlinear global regression on untransformed data is proposed in this article. The proposed method showed differences in parameter estimation compared to the classical two-step kinetic analysis, and demonstrated the advantages of multilevel modeling.
