Nutritional facts regarding commercially available gluten-free bread worldwide: Recent advances and future challenges

Summary: This review examines the ingredients and nutritional labeling of gluten-free bread (GFB) and compares the nutritional quality of these products from different countries. The study found that GFB has lower protein and higher fat content compared to gluten-containing bread, and the dietary fiber content varies between countries. Additionally, micronutrient fortification is not common in commercial GFB. The nutritional quality of GFB is an important issue that needs to be addressed.

Dandelion Flowers as an Additive to Wheat Bread: Physical Properties of Dough and Bread Quality

Summary: The addition of dandelion flowers to wheat flour can increase water absorption, dough stability, as well as mineral, fiber, and fat content in bread. However, it has no positive effect on bread quality, leading to a decrease in loaf volume and crumb lightness, while increasing hardness and yellowness. Dandelion flowers enhance the antioxidant capacity and phenolic content in bread. Therefore, dandelion flowers can be a valuable ingredient for bread fortification, but the substitution of wheat flour should not exceed 2-3% in consideration of sensory results.

Influence of Xanthan Gum Addition on the Short- and Long-Term Retrogradation of Corn Starches of Various Amylose Content

Press cakes, which come from oilseed extraction, have nutritional value, high biopolymer content, and bioactive phytochemicals. Gluten-free breads commonly have texture issues, low nutritional value, and short shelf life, so there is a demand for natural additives containing proteins and hydrocolloids to enhance their value. This study used flaxseed by-product extract to replace water in gluten-free bread formulations and found that it improved the nutritional value, antioxidant properties, and sensory features of the bread.

The Influence of Chestnut Flour on the Quality of Gluten-Free Bread

The results showed that the addition of chestnut flour significantly affected the texture and volume of the bread.
