Supercritical CO2 extraction of spices: A systematic study with focus on terpenes and piperamides from black pepper (Piper nigrum L.)

Summary: This study systematically evaluated the influence of different combinations of pressures and temperatures on the extraction of key compounds from black pepper using supercritical CO2. Terpenes were easily extracted under all conditions, while higher pressures were required for efficient extraction of piperamides. The kinetics of extraction for piperine, piperettine, pellitorine, guineensine, and N-isobutyl-2,4,14-eicosatrienamide were linked to structural features. The results can be used to design a two-step pressure gradient SC-CO2 process for obtaining terpene-rich and piperamide-rich products.

Molecular docking tools were used to explain the interaction between chemical constituents and enzymes. The results showed that rosemary oil had higher antioxidant and cholinesterase inhibitory activities, while wormwood oil was more effective against antidiabetic inhibitory enzymes. Molecular modeling verified the strong binding affinity of certain chemical compounds from rosemary with the studied enzymes. These findings contribute to the understanding of the biological activities of rosemary and wormwood and their potential applications in the food and pharmaceutical industries.

Investigation of the anti-inflammatory and antioxidant activities of luteolin, kaempferol, apigenin and quercetin
