Recovery of Polyphenols from Agri-Food By-Products: The Olive Oil and Winery Industries Cases

Paulina Tapia-Quiros et al.

Summary: The production of olive oil and wine industries in Southern Europe generate large amounts of solid and liquid wastes that are harmful to the environment. The recovery of phenolic compounds has been proposed as a smart strategy for valorizing these by-products, providing a sustainable solution for these industries.

Effect of High Hydrostatic Pressure in the Storage of Spanish-Style Table Olive Fermented with Olive Leaf Extract and Saccharomyces cerevisiae

Daniel Martin-Vertedor et al.

Summary: The study found that high hydrostatic pressure treatment can effectively reduce the yeast and aerobic mesophiles in table olives during storage, thereby extending the shelf-life. In addition, olives treated with high hydrostatic pressure exhibited higher hardness and phenolic content. However, the sensory attributes such as color, appearance, hardness, and overall evaluation of olives declined during storage.

Immunotherapeutic potential of ethanolic olive leaves extract (EOLE) and IL-28B combination therapy in ENU induced animal model of leukemia

Priyatosh Nath et al.

Summary: Cytokine therapies show promise in treating cancers due to their high specificity and fewer side effects compared to chemotherapy and radiation therapy. This study investigates the combined effect of ethanolic olive leaf extract (EOLE) and IL-28B in treating leukemia. Results show that the combination significantly reduces blast cell and total WBC counts, alters cytokine levels, and induces functional activity of NK cells. The combination therapy also enhances overall immunity. This suggests that the combination of EOLE and IL-28B has substantial therapeutic activity against leukemia.

Addition of ?Chetoui? olive leaf extract to reduce acrylamide in Californian-style black olive

Dalel Mechi et al.

Summary: This research focuses on improving food quality by using olive leaf extracts, particularly studying a Tunisian variety named 'Chetoui'. The study found that adult 'Chetoui' olive leaf extract had higher phenolic content and methanol was the most effective solvent. Sensory analysis showed that adding OLE (1:100) to table olives was most appealing for consumers.

Assessment of the acrylamide bioaccessibility in cereal and potato-based foods after in vitro digestion

L. Gonzalez-Mulero et al.

Summary: This study monitored the bioaccessibility of acrylamide during and after in vitro gastrointestinal digestion of cereal and potato-based foods. The composition of the food matrix, including fiber, protein, sugars, and lipids, significantly affected the final bioaccessible acrylamide. The presence of protein sources in potato-based products, such as eggs or meat, significantly decreased the bioaccessibility of acrylamide.

Characterization of Polyphenol and Volatile Fractions of Californian-Style Black Olives and Innovative Application of E-nose for Acrylamide Determination

Elisabet Martin-Tornero et al.

Summary: The sterilization process of Californian-style black olives influences the phenol content, acrylamide synthesis, and volatile compounds. Different olive cultivars show varying levels of phenolic compounds and acrylamide content after sterilization. Acrylamide content is highly correlated with volatile compounds and can be quantified indirectly using an E-nose combined with Partial Least Square analysis.

Identification of mitigation strategies to reduce acrylamide levels during the production of black olives

Daniel Martin-Vertedor et al.

Summary: The study evaluated the impact of different factors on acrylamide concentration in table olives during processing, such as maturity stage, storage time, water treatments, washing, brine, and additives. Optimal conditions included using green olives, increasing storage time, and significantly reducing acrylamide concentration by water treatments and washing.
