Advances in the application of chitosan as a sustainable bioactive material in food preservation

Chitosan for food packaging: Recent advances in active and intelligent films

Summary: The massive use of petroleum-based plastics in food packaging has led to serious environmental issues, prompting the need to develop biodegradable polymer packaging. Chitosan, a natural polysaccharide with non-toxic, antimicrobial, and antifungal properties, is considered a promising material for food packaging. Recent studies have evaluated the potential of active and/or intelligent chitosan-based films in improving food preservation and monitoring. The addition of active compounds has been shown to enhance the mechanical, barrier and functional properties of chitosan films, with potential applications in antimicrobial and antioxidant activities.

Chitosan/zein bilayer films with one-way water barrier characteristic: Physical, structural and thermal properties

Summary: Chitosan and zein were used to develop bilayer films with a one-way water barrier. The effects of mass ratios on the microstructure and properties of the films were investigated. The results showed that the C:Z = 1:3 film had better performance, especially in water vapor and oxygen permeability.

Effect of glucose-induced Maillard reaction on physical, structural and antioxidant properties of chitosan derivatives-based films

Summary: This study focused on the changes in physicochemical and antioxidant properties of chitosan-depolymerization products (CDP) films with varying molecular weights after crosslinking by heat treatment and Maillard reaction. Furthermore, thermal treatment improved the thermal stability and mechanical properties of the films.

Development and characterization of novel antioxidant films based on chitosan and Maillard reaction products

Summary: This study aimed to manufacture antioxidant films based on chitosan and Maillard reaction products derived from cod skin collagen peptides. The results showed that with the incremental amounts of MRPs, the thickness, water solubility, and water vapor permeability of chitosan films increased, while water content, tensile strength, and elongation at break decreased. Incorporation of MRPs improved UV-vis light barrier properties and antioxidant capacities of the films, with little effect on thermal stability within the 0-10% range.

Water resistance and biodegradation properties of conventionally-heated and microwave-cured cross-linked cellulose nanocrystal/chitosan composite films

Summary: Cross-linking of cellulose nanocrystals/chitosan composite films using glutaraldehyde as the cross-linking agent through conventional heating and microwave curing was found to enhance water resistance properties and reduce water vapor permeability. The addition of CNC significantly decreased WVP, swelling, and solubility of chitosan films, especially for microwave-cured GA-cross-linked CNC/chitosan films. Biodegradation testing showed that cross-linked chitosan composite films had lower degradability rates compared to uncross-linked composites, particularly microwave-cured CNC/chitosan films, with identified degrading microorganisms of Ophiocordyceps heteropoda, Enterobacter kobei, and E. roggenkampii.
