Characterization of Volatile Flavor Compounds in Supercritical Fluid Separated and Identified in Gurum (Citrulluslanatus Var. colocynthoide) Seed Oil Using HSME and GC-MS

Summary: This study compared the volatile compound profiles of gurum seed oil extracted using supercritical CO2 extraction and the screw press process. The results showed that different extraction methods significantly impacted the volatile components of the oil. Supercritical CO2 extraction resulted in a higher number of volatile compounds and improved the aroma of the oil.
