Genetic algorithm applied to simultaneous parameter estimation in bacterial growth

Hector A. Pedrozo et al.

Summary: A study utilized inverse engineering and a multi-objective optimization procedure to determine model parameters for the growth of microorganisms in foods. By applying a genetic algorithm to fit multiple experimental growth curves simultaneously, superior results were achieved with higher parameter identifiability compared to a conventional sequential approach. The method was tested on experimental data sets of simultaneous growth of lactic acid bacteria and Listeria monocytogenes, showing promising potential for predicting microbial interactions in foods.

Mathematical Modeling of Lactobacillus paracasei CBA L74 Growth during Rice Flour Fermentation Performed with and without pH Control

Rosa Colucci Cante et al.

Summary: The study found that the Contois model could best describe bacterial growth rate in a rice flour fermentation process without pH control. In contrast, both Monod and Contois models were able to satisfactorily describe the specific growth rate trend when pH control was implemented.

Banana Puree Lactic Fermentation: The Role of Ripeness, Heat Treatment, and Ascorbic Acid

Marianna Gallo et al.

Summary: Ripe banana puree is a suitable substrate for fermentation in the development of probiotic products, and heat treatment and addition of anti-browning agents do not significantly impact fermentation performance. Fermentation of ripe bananas resulted in better outcomes compared to unripe bananas, and the addition of ascorbic acid did not show significant differences in fermentation results, with lower values obtained for growth and lactic acid production.
