DSC isothermal and non-isothermal assessment of thermo-oxidative stability of different cultivars of Camelina sativa L. seed oils

Summary: There is growing interest worldwide in the use of camelina oil for food as well as for biofuel purposes. This study aimed to investigate the thermal resistance to oxidation of three different cultivars of camelina oil. Isothermal and non-isothermal differential scanning calorimetry (DSC) were used to measure the oxidation of the oils. The results showed that the thermal stability of the oil was negatively correlated with the content of unsaturated fatty acids and positively correlated with color and radical scavenging activity.

Comprehensive Thermal Characteristics of Different Cultivars of Flaxseed Oil (Linum usittatissimum L.)

Summary: This study aimed to describe the thermal properties of selected cultivars of flaxseed oil using the DSC technique. Findings revealed characteristics of crystallization and melting profiles, as well as the influence of temperature and heating rate on the stability of flaxseed oil during thermal oxidation. Negative correlations were observed between unsaturated fatty acid content and thermal properties.

Antioxidant and Anti-Inflammatory Potential and Consumer Acceptance of Wafers Enriched with Freeze-Dried Raspberry Pomace

Summary: The study found that adding raspberry pomace significantly increased the content of phenolic compounds, antioxidant and anti-inflammatory activities in wafers, with a potentially bioavailable fraction extracted after in vitro digestion showing the highest activity. Fortified wafers effectively inhibited enzyme activities associated with free radical generation and inflammation induction, with extracts after in vitro digestion demonstrating the lowest IC50 values. Sensory evaluation favored wafers fortified with 20% pomace, highlighting the potential benefits of incorporating fruit and vegetable waste products into confectionery to enhance the proportion of biologically active polyphenols in the diet.
