Molecular dynamics study on emulsified oil droplets with nonionic surfactants

Summary: The molecular structure of emulsified oil droplets was investigated using molecular dynamics simulation. The simulation results revealed that the stacking structure of asphaltene and resin molecules forms the netlike structure of the oil droplet. Introduction of nonionic surfactants alters the hydrophilicity of the oil droplet surface and disrupts the stacking structure inside the droplet, resulting in reduced viscosity of the emulsified heavy oil.

Orientation and Conformation of Hydrophobin at the Oil-Water Interface: Insights from Molecular Dynamics Simulations

Summary: Hydrophobins are widely used in the food, pharmaceutical, and chemical industries as potential protein emulsifiers. This study employed molecular dynamics simulations to investigate the adsorption orientation and conformation change of hydrophobin HFBI at the oil-water interface. The results showed that HFBI adsorbed at the interface with a patch-up orientation towards the oil phase, maintaining its secondary structure intact. The driving force for adsorption was primarily determined by van der Waals interactions, while the adsorption orientation and conformation were regulated by hydrophobic patches and key residues.
