Physicochemical, structural, and rheological characteristics of corn starch after thermal-ultrasound processing

Abdolkhalegh Golkar et al.

Summary: Thermal-ultrasound treatment was studied on the physicochemical, structural, and rheological properties of corn starch. It was found that certain properties of starch, such as amylose content, solubility, and swelling power, increased with higher temperature and longer treatment time. The treatment at 45 degrees C for 30 minutes resulted in the lowest syneresis. Treatment at 25 degrees C and 65 degrees C for 60 minutes improved the clarity of the paste.

Impact of thermo-sonication on quality indices of starch-based sauces

Valentine C. Okonkwo et al.

Summary: Ultrasonication was found to significantly enhance the functional properties of rice starch and rice starch-based sauces, improving granular swelling power, fat and water absorption capacities, and thermal properties. The rheological and textural analysis of sauces indicated a shear-thinning behavior and improved textural attributes with ultrasonication, while enhanced freeze/thaw stability was also observed. Overall, ultrasound-treated starches show promise for use in clean label and minimally processed food products.

The effects of dual modification on functional, microstructural, and thermal properties of tapioca starch

Neda Javadian et al.

Summary: This study revealed that dual modified tapioca starch exhibited higher solubility and swelling power, as well as lower gelatinization and pasting parameters compared to other treatments. The findings suggest the potential application of dually modified tapioca starch in dip molding and coating.
