Transformation of ginsenosides by moderate heat-moisture treatment and their cytotoxicity toward HepG2 cells

Summary: This study investigated the effects of heat-moisture treatment on ginsenoside contents and compositions. The results showed that heat-moisture treatment increased the total ginsenoside content and the accumulation of less polar ginsenosides Rg3 and CK. The treated ginsenoside extracts exhibited better scavenging activities and higher cytotoxicity against HepG2 cells. The promotion of cell apoptosis through up-regulated protein expression was also observed. These findings suggest the promising application of heat-moisture treated ginsenoside extracts in nourishing and disease chemoprevention.

Dietary Melanoidins from Biscuits and Bread Crust Alter the Structure and Short-Chain Fatty Acid Production of Human Gut Microbiota

Summary: In this study, the impact of melanoidins extracted from biscuits or bread crust on the human gut microbiota was assessed using a three-stage Human Gut Simulator system. Results showed that the addition of melanoidins led to significant changes in microbial community composition, with greater effects observed for biscuit melanoidins. Furthermore, the presence of lipid components in biscuit melanoidin structures may contribute to these differences. Melanoidins, being resistant to degradation by gastrointestinal enzymes, provide an additional source of nutrition for gut microbes.

Summary: This study found that the treatment with GB could alleviate dyslipidemia, inflammation, increased atherosclerotic plaque, and gut barrier dysfunction induced by a high fat diet. Moreover, the treatment obviously inhibited the mRNA level and protein expression of FMO3, leading to decreased concentrations of TMA and TMAO, which was related to changes in the gut microbiota of HFD-fed mice. Modulation of gut microbiota, specifically the increased abundance of Bacteroides and decreased abundance of Helicobacter, may contribute to the antiatherosclerotic effects of GB.

Evaluation on the physicochemical and digestive properties of melanoidin from black garlic and their antioxidant activities in vitro

Summary: This study investigated the physicochemical properties and bioactivities of melanoidin (MLD) as an important compound in black garlic. The results showed that MLD had strong metal-ion chelating capacity and radical scavenging activities, positively correlated with molecular weight. Additionally, MLD remained unchanged during simulated digestion, indicating its resistance to digestion similar to dietary fiber. It was found that the bioactivities of MLD were significantly reduced under certain treatments, but stable and retained after adding specific enzymes, providing insights for further research and application in functional food production.
