Microbial exopolysaccharide production of Streptococcus thermophilus and its antiquorum sensing activity

Summary: Interest in microbial production of exopolysaccharides has been growing, with a focus on using low-cost inputs to compete with chemical production. In this study, Streptococcus thermophilus isolates from yogurt, kefir, and a control strain were found to produce higher EPS amounts on M17 medium compared to Nutrient medium, with further increases when adding fruit pulp and nitrogen sources. The highest EPS production was achieved with a medium containing mixed fruit pulp juice and tryptophan as the nitrogen source, showing the potential of fruit pulps as a cost-effective alternative for EPS production in waste management. Additionally, the EPS produced demonstrated quorum sensing activity, inhibiting violacein pigment and C6-AHL production in a biosensor strain.

Protective Effect of an Exopolysaccharide Produced by Lactiplantibacillus plantarum BGAN8 Against Cadmium-Induced Toxicity in Caco-2 Cells

Summary: The study found that an EPS produced by Lactiplantibacillus plantarum BGAN8 has a high capacity for binding cadmium, alleviating the toxic effects of cadmium on intestinal epithelial cells, and preventing inflammation, disruption of tight junction proteins and oxidative stress. Additionally, higher concentrations of the EPS can mitigate cadmium-induced cell damage.

This review focuses on the in vitro and in vivo antimicrobial activities of different EPSs against foodborne bacterial, fungal, and viral pathogens, as well as the mechanisms of action and methods of measurement.
