Relationship between structure and some physico-chemical properties of funori from red seaweed Gloiopeltis

Summary: The relationship between structural characteristics and some physico-chemical properties of ma-funori and fukuro-funori were elucidated in this study. Ma-funori exhibited a relatively regular structure with a repeating unit, while fukuro-funori had a complex structure with various substitute groups. Physico-chemical properties such as solubility, wettability, and viscosity differed between the two types of funori, with fukuro-funori showing higher solubility and better wettability, while ma-funori had higher viscosity. The structural characteristics played a key role in determining these differences.
