The impacts of complexation and glycated conjugation on the performance of soy protein isolate-gum Arabic composites at the o/w interface for emulsion-based delivery systems

Summary: This study investigated the preparation of soy protein isolate (SPI)-gum Arabic (GA) composites through complexation and glycated conjugation, and evaluated their functionality. It was found that the composites prepared by conjugation showed better emulsifying and stabilizing abilities, lower release rate, and higher skin penetration ability. The complexation and conjugation abilities of GA with two major individual proteins in SPI were also evaluated, and one protein showed higher tendency to form conjugates with GA.

Glycation of whey protein isolate and emulsions prepared by conjugates

Summary: In this study, WPI-dextran conjugates were prepared via Maillard reaction to improve the functional properties of WPI. The grafting reaction destroyed intermolecular hydrogen bonds and affected the spatial structure of WPI, forming macromolecular colored substances. The glycosylation modification enhanced the electrostatic and spatial repulsion of WPI, resulting in improved stability of nanoemulsions.

Summary: By using the dynamic high pressure microfluidization (DHPM) assisted glycosylation reaction method, glycoconjugates of Dextran and LSPI were produced, significantly improving the solubility and emulsifying properties of LSPI. The DHPM-induced glycosylation reaction promoted the unfolding of LSPI molecules, resulting in the production of the smallest and most homogeneous oil droplets under 120 MPa treatment pressure.
