Modelling the thermal inactivation of spores from different phylogenetic groups of Bacillus cereus

Summary: The objective of this study is to develop refined thermal inactivation models for Bacillus cereus by matching available phylogenetic information with thermal resistance parameters. Thermal parameters were retrieved for 57 strains of Bacillus cereus, and specific distributions were built for different phylogenetic groups to improve the accuracy of the models. The study found that an alternative Monte Carlo simulation set provided better correspondence between predicted and observed limits of D-values.

LAB in sourdough can come from various sources such as flour, other dough ingredients, or the production environment, impacting the diversity of LAB in sourdough. Recent studies have shown that bread/steamed bread made with sourdough LAB produces more aromatic compounds, demonstrates higher antifungal and acrylamide-lowering activities, and possesses greater nutritional value compared to foods fermented solely with yeast. Additionally, specific LAB species like Pediococcus pentosaceus and Fructilactobacillus sanfranciscensis are highlighted for their performance in fermentation and their important role within a complex microbial community.
