Physicochemical stability and in vitro digestibility of goat milk affected by freeze-thaw cycles

Summary: The influences of freeze-thaw cycles on physicochemical stability and in vitro digestibility of goat milk were evaluated in this study. The results showed that freeze-thaw cycles led to increased acidity, decreased fat content, and decreased viscosity of goat milk. Protein oxidation was enhanced, and the microstructure of the milk changed. Despite the decrease in physical stability, freeze-thaw cycles improved the in vitro digestibility and antioxidant capacity.

Effects of Soybean Oil Body as a Milk Fat Substitute on Ice Cream: Physicochemical, Sensory and Digestive Properties

The results showed that SOB substitution increased the stability of ice cream and improved its texture characteristics. It also had potential health benefits due to the increased unsaturated fatty acid content. Therefore, SOB could be an effective way to improve the nutritional value and quality of dairy products.
