Preparation, identification, and molecular docking of novel elastase inhibitory peptide from walnut (Juglans regia L.) meal

Summary: In this study, bioactive peptides with elastase inhibitory activity were successfully isolated from walnut meal using ultrasonic enzymatic hydrolysis. The pentapeptide FFVPF showed better elastase inhibitory activity and specific stability in the gastric environment. These findings suggest that FFVPF could serve as a potential source of elastase inhibitors in the food, medical, and cosmetics industries.

Impact of different crosslinking agents on functional properties of curcumin-loaded gliadin-chitosan composite nanoparticles

Summary: This study investigated the impact of different crosslinking agents on the functional properties of gliadin-chitosan composite nanoparticles for curcumin delivery. The addition of chitosan increased the encapsulation efficiency of curcumin in the nanoparticles, with sodium tripolyphosphate showing the highest efficiency. Different crosslinking agents had varying effects on the properties of the composite nanoparticles, with phytic acid and sodium phytate modification providing better thermal and UV light stability.

Development of delivery system based on marine chitosan: Encapsulation and release kinetic study of antioxidant peptides from chitosan microparticle

Summary: This study aimed to encapsulate goby fish protein hydrolysate with antioxidant activity into microparticles using ionic gelation process. The loaded microparticles showed improved encapsulation efficiency and reduced particle size with increasing GPH concentration. Additionally, the encapsulated biopeptides exhibited enhanced thermal stability and followed a diffusion-controlled mechanism for release kinetics, leading to improved antioxidant activity compared to unloaded microparticles.
