Physicochemical Characteristics and Microbial Communities in Gochujang, a Traditional Korean Fermented Hot Pepper Paste

Summary: This study identified the physicochemical characteristics and microbial communities of gochujang and investigated the interrelationship between them before and after fermentation. The microbial genera in gochujang changed significantly after fermentation, with Bacillus becoming predominant among bacteria and Zygosaccharomyces and Millerozyma dominating among fungi. The high level of amino-type nitrogen before fermentation was related to the abundance of specific bacteria, while the flavor of gochujang after fermentation was influenced by the abundance of certain fungi. This analysis provides insights into the factors affecting the quality of gochujang.

Novel approaches for the identification of microbial communities in kimchi: MALDI-TOF MS analysis and high-throughput sequencing

Summary: A study compared culture-dependent and culture-independent methods for identifying microbial community changes during kimchi fermentation. Both methods identified Lactobacillus-related genera, Leuconostoc, and Weissella as predominant microorganisms, with the culture-independent method additionally identifying non-lactic acid bacteria and yeasts. The culture-dependent method could identify species level and predominant species in viable cell communities, while culture-independent method provided a more comprehensive view of the microbial ecology in fermented kimchi.

Methylobacterium ajmalii sp. nov., Isolated From the International Space Station

Summary: Three novel bacterial strains, IF7SW-B2(T), IIF1SW-B5, and IIF4SW-B5, belonging to the genus Methylobacterium, were isolated from the International Space Station (ISS). These strains are proposed to be a new species named Methylobacterium ajmalii based on genomic, phylogenetic, biochemical, and fatty acid analyses.

Summary: Rhodococcusequi is a major cause of foal pneumonia and an opportunistic pathogen in immunocompromised humans. Macrophages infected with R. equi induce a robust type I IFN response, similar to Mycobacterium tuberculosis. R. equi activates cytosolic DNA sensing in macrophages and elicits type I IFN responses in animal models.
