Differences in dynamic sensory perception between reformulated hazelnut chocolate spreads decrease when spreads are consumed with breads and wafers

Summary: This study investigated the effect of adding bread and wafer as carrier foods on the sensory perception of chocolate hazelnut spreads. The research found that low fat/high sugar spreads had higher stickiness and mouth drying compared to high fat/high sugar spreads. The addition of carriers reduced stickiness and influenced the dynamic sensory perception of the spreads. At the beginning of chewing, sensations related to carriers dominated, while at later stages, sensations related to spreads became more dominant.

Summary: This study explores the differences in oral processing behavior and subsequent glycemic response between Asian (Chinese) and Caucasian subjects. Chinese subjects exhibited slower saliva flow rate but higher salivary alpha-amylase activity. They also took larger mouthful sizes, chewed for longer, and swallowed more particles with smaller sizes. Chinese subjects had higher overall glycemic response and peak blood glucose level compared to New Zealand subjects.

Slower eaters have higher post-prandial insulin levels and longer oral exposure time compared to faster eaters, leading to differences in glucose response. Faster eaters also report higher levels of hunger and desire to eat compared to slower eaters.
