Summary: The addition of DE caused heterogeneity in the surface and internal structure of the films, leading to a decrease in gloss and water drop contact angle mainly due to increased surface roughness. Additionally, DE significantly improved the UV/Vis light barrier property of the films. The presence of DE increased the strength and stiffness of gelatin and chitosan-based films, but decreased these properties in the gelatin/chitosan blend, while also increasing the extensibility of all films and decreasing water solubility, water vapor permeability, and opacity. Films with DE exhibited high antioxidant activity, with films based on gelatin being the only ones to inhibit Staphylococcus aureus.
