Laser-backscattering imaging for characterizing pork loin tenderness. Effect of pre-treatment with enzyme and cooking

Summary: This study aimed to characterize the effect of pre-treatment with papain enzyme, enzyme action time, and cooking on pork loin tenderness using non-destructive laser-backscatter imaging analysis. The results showed increased tenderness in samples treated with enzyme for 6 hours, with cooking reducing enzyme activity. Texture changes in the meat were related to specific color channels, enabling prediction models to be developed.

Determination of banana quality indices during the ripening process at different temperatures using smartphone images and an artificial neural network

Summary: The study focused on analyzing banana quality and ripening stages at different temperatures using a smartphone camera and an artificial neural network (ANN). The relationship between color features extracted from images and chemical/physical properties of bananas was examined. The ANN models efficiently predicted firmness and TSS of bananas, but were less accurate in predicting pH value and ratio of pulp to peel. The study demonstrated a potential post-harvest method using smartphone cameras and ANN to estimate banana quality during ripening.
