Qualitative characteristics of hyssop (Hyssopus officinalis L.) under the influence of harvest time and drying methods

Summary: Hyssop, an important medicinal and aromatic crop, was harvested at different times during the day and subjected to various drying methods. Essential oil content increased from morning to noon, then decreased in the afternoon. Higher temperatures during drying led to increased browning index. Microwave drying at 100 W resulted in the highest EO content, while microwave drying at 600 W had the lowest.
