Summary: Microemulsions, stable mixtures of oil, water, and surfactant, have been studied for over 70 years, but there are still unclear aspects and recent research has challenged previous understanding, including the discovery of nonclassical microemulsions. The flexibility of the amphiphilic film is considered a key property for classifying microemulsion types and properties.

Probing Water State during Lipidic Mesophases Phase Transitions

Summary: The study found two dynamically different fractions of water in both double continuous cubic and H-II phases, which are slower than bulk water due to hydrogen bonds between water molecules and the lipid's polar headgroups as well as nanoconfinement. Results from FTIR and BDS suggest a larger fraction of water is hydrogen-bonded to the headgroup of lipids in the H-II phase at higher temperature than in the cubic phase at lower temperature, contrary to common expectations.
