Removing surface proteins promote the retrogradation of wheat starch

Influence of three types of freezing methods on physicochemical properties and digestibility of starch in frozen unfermented dough

Summary: Different freezing methods were applied to frozen unfermented dough, showing that freezing methods could reduce the average particle size of starch granules and destroy surface microstructure, especially RF. Freezing treatments also altered the gelatinization and pasting properties of starches, resulting in internal rearrangement of starch molecules. Additionally, freezing methods had different effects on the starch structure and properties, with RF causing larger damage to starch structure compared to LF and SF.
