Identification of Oncorhynchus mykiss nebulin-derived peptides as bitter taste receptor TAS2R14 blockers by in silico screening and molecular docking

Zhipeng Yu et al.

Summary: Peptides ADM and ADW from Oncorhynchus mykiss nebulin hydrolysates were found to block the binding of bitter substances into the bitter taste receptor TAS2R14, reducing bitterness intensity. Hydrogen bond interaction and hydrophobic interaction played important roles in the high affinities of these peptides for the receptor.

Preparation and Taste Characteristics of KokumiN-Lactoyl Phenylalanine in the Presence of Phenylalanine and Lactate

Jing Wu et al.

Summary: This study investigated the preparation methods and content of N-L-lactoyl phenylalanine, as well as its taste properties. The results showed that N-L-lactoyl phenylalanine could be produced with high yield through heating and enzymatic methods. It was found to enhance the salty and umami intensity in water, as well as the thickness and mouthfulness of salt solution, model broth, and chicken broth. The compound was also quantified in various traditional Chinese fermented foods, indicating its potential as a taste enhancer.

Preparation, Sensory Characterization, and Umami-Enhancing Mechanism of Novel Peptide Glycoconjugates

Jianan Zhang et al.

Summary: This study confirmed the better umami-enhancing abilities of Amadori rearrangement products (ARPs) of peptides through synthesis and sensory experiments. ARPs showed a synergistic effect with umami substances and had a stronger umami-enhancing capacity compared to the corresponding peptides. RFPHADF-ARP, despite being a bitter peptide initially, exhibited good umami-enhancing properties.

Discovery and Identification of Tastants and Taste-Modulating N-Acyl Amino Acid Derivatives in Traditional Korean Fermented Dish Kimchi Using a Sensomics Approach

Peter Christa et al.

Summary: Sensory-guided fractionation techniques were used to identify taste-active and taste-enhancing compounds in kimchi. N-acylated amino acids derived from succinic acid and lactic acid were found to have taste-modulating properties in food matrices, contributing to the umami, mouthful, and complex taste profile of kimchi.

An exercise-inducible metabolite that suppresses feeding and obesity

Veronica L. Li et al.

Summary: Exercise stimulates the production of a blood-borne metabolite called Lac-Phe, which suppresses feeding and obesity. This metabolite is synthesized in specific cells and controls appetite, reduces fat content, and improves glucose balance. It is also observed in humans and racehorses, suggesting that it is a molecular effector associated with physical activity in multiple species.

Umami-enhancing effect of typical kokumi-active γ-glutamyl peptides evaluated via sensory analysis and molecular modeling approaches

Juan Yang et al.

Summary: The umami-enhancing effect of typical kokumi-active gamma-glutamyl peptides was studied, revealing strong interactions with the taste type 1 receptor 3 (T1R3)-monosodium glutamate (MSG) complex. Specific amino acid residues were identified as critical in these interactions, with different dipeptides and tripeptides showing varying affinities and modes of interaction with T1R3-MSG. These findings suggest potential synergistic effects in enhancing umami taste and provide insight into the molecular mechanisms underlying the interaction between kokumi-active peptides and the umami receptor.

Lactoyl leucine and isoleucine are bioavailable alternatives for canonical amino acids in cell culture media

Corinna Schmidt et al.

Summary: This study investigated highly soluble and bioavailable derivatives of leucine and isoleucine for cell culture media, showing benefits in increasing overall solubility. The modified amino acids were found to be suitable for CHO cells and could replace canonical amino acids in cell culture feeds. Overall, N-lactoyl amino acids provide a promising alternative for developing highly concentrated cell culture media formulations to support next generation bioprocesses.

Metabolomic Analysis Reveals Changes in Plasma Metabolites in Response to Acute Cold Stress and Their Relationships to Metabolic Health in Cold-Acclimatized Humans

Zuzana Kovanicova et al.

Summary: Cold exposure activates metabolic processes for thermogenesis, potentially improving metabolic health. Acute cold exposure in cold-acclimatized individuals induces changes in plasma metabolites, particularly in amino acid metabolism and the linoleic/alpha-linolenic acid metabolic pathway. Metabolites related to metabolic health, thermogenic hormonal regulators, and acclimatization level could be key factors in adapting to regular cold exposure.
