Comprehensive Analysis of the Longissimus Dorsi Transcriptome and Metabolome Reveals the Regulatory Mechanism of Different Varieties of Meat Quality

Metabolomic analysis of plasma and intramuscular adipose tissue between Wagyu and Holstein cattle

Summary: In this study, we used CE-TOFMS to investigate the metabolomic profiles of plasma and intramuscular adipose tissue between Wagyu and Holstein, which have different intramuscular adipogenic capacities. The results showed that Wagyu exhibited higher intramuscular fat content, adipocyte size, and expression of adipogenic transcription factors than Holstein. The metabolites detected at higher levels in Wagyu plasma were associated with tricarboxylic acid cycle, lipid synthesis, fatty acid metabolism, diabetes, and glucose homeostasis, while those detected at higher levels in Holstein plasma were associated with choline metabolism, ethanolamine pathway, glutathione homeostasis, nucleic acid metabolism, and amino acid metabolism. Moreover, metabolites detected at higher levels in Holstein intramuscular adipose tissue were related to nucleic acid metabolism, amino acid metabolism, amino sugar metabolism, beta oxidation, and the ethanolamine pathway. These findings provide candidate biomarkers for breed differences in intramuscular adipogenic capacity between Wagyu and Holstein.

Comparative Transcriptomic Analysis Reveals Diverse Expression Pattern Underlying Fatty Acid Composition among Different Beef Cuts

Summary: This study characterized the dynamics of fatty acid composition in five different types of beef cuts using comparative transcriptomic analysis. 7545 differentially expressed genes were identified among 10 pair-wise comparisons, with two modules significantly correlated with fatty acid composition. Functional enrichment analysis revealed candidate genes involved in fatty acid biosynthesis and degradation, PPAR, and AMPK signaling pathway.
