Investigation of blueberry juice fermentation by mixed probiotic strains: Regression modeling, machine learning optimization and comparison with fermentation by single strain in the phenolic and volatile profiles

Weihua Liao et al.

Summary: Three strains, L. fermentum, L. plantarum and S. thermophilus, were used to ferment blueberry juice. The combination of S. thermophilus with either L. fermentum or L. plantarum weakened the capacity of Lactobacillus strains to enrich phenolics, and the combinations of these strains had no synergistic effect of synthesizing lactic acid.

The competing influence of surface roughness, hydrophobicity, and electrostatics on protein dynamics on a self-assembled monolayer

Anastasiia Misiura et al.

Summary: Surface morphology, hydrophobicity, and electrostatic effects can all influence protein interactions with solid surfaces. This study uses single-molecule fluorescence microscopy to investigate the adsorption of alpha-lactalbumin protein on glass substrates with a self-assembled monolayer (SAM) covering. Two distinct interaction mechanisms, localized adsorption/desorption and continuous-time random walk, are observed. The researchers find that SAM-covered regions promote the continuous-time random walk mechanism, while bare glass surfaces promote localized motion. Increasing SAM concentration leads to increased hydrophobicity and surface roughness, which affects protein dynamics and residence times.
