Mechanistic Insight into the Fragmentation of Type I Collagen Fibers into Peptides and Amino Acids by a Vibrio Collagenase

Summary: Collagenases produced by pathogenic Vibrio species are important virulence factors. This study characterizes the M9A collagenase VP397 from Marine Vibrio pomeroyi strain 12613 and reveals its degradation mechanism on type I collagen. VP397 first attacks the C-telopeptide region and then digests tropocollagen fragments at the Y-Gly bonds. This study provides new knowledge about the collagenolytic mechanism of Vibrio collagenase, which has implications for understanding Vibrio pathogenesis and developing industrial and medical applications of collagenase.

Physicochemical, Pasting, and Thermal Properties of Native Corn Starch-Mung Bean Protein Isolate Composites

Summary: The aim of this study was to investigate the effect of mung bean protein isolate (MBPI) on the physicochemical, pasting, and thermal properties of native corn starch (NCS). The results showed that increasing MBPI concentration led to higher swelling power, water absorbance capacity, and solubility of NCS. Additionally, the addition of MBPI lowered the pasting temperature, final viscosity, and setback, while increasing the peak viscosity and breakdown. The thermal properties of NCS/MBPI gels exhibited higher onset, peak, and conclusion temperatures, but lower gelatinization enthalpy, with increasing MBPI concentration. Fourier transform infrared spectroscopy (FT-IR) analysis indicated a decrease in hydrogen bond content within starch upon addition of MBPI. Furthermore, the freeze-thaw shock test showed reduced syneresis in NCS-MBPI composites.

Assessment of Biodegradation and Eco-Toxic Properties of Novel Starch and Gelatine Blend Bioplastics

Summary: In order to combat the release of petroleum-derived plastics into the environment, the European Commission has adopted the EU plastics strategy with the goal of a complete ban on single-use plastics by 2030. Environmentally friendly and sustainable packaging, such as bioplastics, has been widely adopted by companies and consumers. The study found that novel gelatine-starch blend bioplastics can be fully biodegraded in soil environments at moderate conditions, without exhibiting significantly adverse effects on organisms, with changes in the soil microbiome after degradation.

Further research is needed to optimize the physicochemical properties of these bioplastics.
