Effect of curdlan on the aggregation behavior and structure of gluten in frozen-cooked noodles during frozen storage

Summary: The protective effect of curdlan on the quality of frozen-cooked noodles (FCNs) during frozen storage was explored from the perspective of aggregation behavior and structure of gluten. The results showed that curdlan weakened the depolymerization behavior of gluten proteins, stabilized the secondary structure of gluten proteins, inhibited the aggregation of gluten chains, and enhanced the connectivity and uniformity of gluten network.
