Distribution of aldehydes compared to other oxidation parameters in oil matrices during autoxidation

Summary: During the 50 degrees C autoxidation process, the moisture content in soybean oil increased significantly, leading to a simultaneous increase in HS aldehydes and other oxidation parameters. In contrast, in O/W emulsion, the changes in HS aldehydes better reflected the oxidation stage, unlike lipid hydroperoxides and conjugated compounds which did not show a significant increase.
