The preparation, characterization and antibacterial properties of chitosan/pectin silver nanoparticle films

Gulen Oytun Akalin et al.

Summary: In recent years, the production of edible films using natural biodegradable polymers, with the addition of antibacterial materials to improve product shelf life and quality, has increased. Silver nanoparticle films based on chitosan and chitosan/pectin were synthesized, showing eco-friendly and antibacterial properties. The presence of pectin improved thermal stability and mechanical properties, and the films exhibited long-lasting antibacterial activity against E.coli compared to chitosan-based films.
