Organocatalytically esterified polysaccharides (OEPs) have been synthesized using green catalyst-assisted reactions to graft short-chain fatty acids and small hydrophobic moieties onto carbohydrate polymer backbones. These SCFA-grafted OEPs can escape digestion and deliver SCFAs in the lower gut, and also have cardiometabolic benefits. OEPs can also be used for the development of food packaging with improved hydrophobicity and thermal stability.

The best samples were used to coat three-layer microcapsules containing pancreatic islets, which were transplanted into diabetic mice. The results showed reduced blood glucose levels and improved function of the transplanted islets, indicating the potential of this approach for treating type 1 diabetes.

LOs exhibited excellent antioxidant activities and a prebiotic effect on the growth of Bifidobacterium adolescentis and Lactobacillus plantarum. Effect of citric acid and plasma activated water on the functional properties of sodium alginate for potential food packaging applications

Summary: This study found that the addition of citric acid, glycerol, and plasma-activated water can impact the functional properties of sodium alginate films, including tensile strength, elongation at break, and linear viscoelastic region. Additionally, the addition of 1% citric acid significantly reduces water vapor transmission rate, while the addition of PAW further decreases permeability.
