Effects on volatile oil and volatile compounds of Amomum tsao-ko with different pre-drying and drying methods

Summary: In this study, seven parameters of headspace solid phase micro-extraction (HS-SPME) were comprehensively optimized for extracting volatile compounds from cabbage, resulting in the identification and quantification of 75 volatiles in 10 cabbage cultivars. The most abundant volatile was dimethyl ether, and pungent aroma was found to be the strongest, followed by green and fruity aromas. Purple cabbages generally had higher overall odor activity values compared to green cabbage, and the volatile profiles of different cabbage cultivars could be distinguished using radar fingerprint chart (RFC), hierarchical cluster analysis (HCA) and principal component analysis (PCA).

Summary: The research developed an optimized HS-SPME-GCxGC-TOFMS method for the quantitation of a large number of trace compounds in Baijiu. This method demonstrated high recovery, good repeatability, high linearity, and lower detection limits compared to reported methods, and was successfully applied to analyze volatile compounds in different types of Baijiu. The developed method is a valid and accurate procedure for the simultaneous determination of different types of trace compounds in Baijiu, and can improve the analysis of other samples with complex matrices.

HS-SPME and GC/MS volatile component analysis of Yinghong No. 9 dark tea during the pile fermentation process

Summary: Each type of tea has a unique volatile profile due to its variety, processing technologies and origin. In this study, volatile components in cultivar Yinghong No. 9 during pile fermentation were analyzed, showing significant differences in 94 compounds over 60 days. Some metabolites were characteristic volatile compounds of raw material sun-dried green tea and dark tea. These findings provide a theoretical basis for process and quality improvement of Yinghong No. 9.

Drying temperature affects essential oil yield and composition of black cardamom (Amomum tsao-ko)

Summary: Black cardamom is the dried ripe fruit of Amomum tsao-ko Crevost et Lemaire, functioning both as a materica medica and an important spice in eastern and southeastern Asia. Metabolomics methods were used to study the composition and content of essential oils in black cardamom dried under different temperatures, revealing variations in compounds depending on the drying temperature. High temperatures produced samples richer in monoterpene hydrocarbons, while lower temperatures resulted in (E)-2 unsaturated aldehydes.
