Exploring in vitro release and digestion of commercial DHA microcapsules from algae oil and tuna oil with whey protein and casein as wall materials

Zejun Hu et al.

Summary: This study found that A-DHA microcapsules exhibited more stable release and digestion behaviors in the gastrointestinal tract, with better resistance to gastric proteolysis, while T-DHA microcapsules showed a decrease in release due to interaction with bile salts forming micelles. Significant positive correlations were observed between the release ratio of both microcapsules and protein hydrolysis.

In vitro gastric digestion and emptying of cooked white and brown rice using a dynamic human stomach system

Junyan Wang et al.

Summary: This study shows that brown rice has higher pH buffering capacity and larger digesta particle size due to the protective effect of the outer bran layer, resulting in lower starch hydrolysis and overall digestibility in the stomach compared to white rice. Additionally, the in vitro system demonstrated effective size reduction and sieving efficiency in digesta emptied out of the stomach in both white and brown rice during digestion.

Structural and rheological properties of the clots formed by ruminant milks during dynamic in vitro gastric digestion: Effects of processing and species

Siqi Li et al.

Summary: This study examined the impact of homogenisation and heat treatment on the structural and rheological properties of gastric milk clots from sheep, goat, and cow milks during simulated gastric digestion. Overall, higher processing intensity led to more fragmented and less consistent clots with higher moisture content. The differences between species suggest variations in physicochemical properties may be responsible for the observed effects of processing treatments on clot structure.

In vitro gastric digestion and emptying of tsampa under simulated elderly and young adult digestive conditions using a dynamic stomach system

Liang Li et al.

Summary: This study quantified the gastric digestion and emptying of a traditional Tibetan diet in elderly individuals. The results showed that elderly individuals had slower gastric emptying rates and impaired protein digestion compared to young adults. These findings highlight the importance of developing food products suitable for the elderly.

Impact of gastric coagulation on the kinetics of release of fat globules from milk of different species

Debashree Roy et al.

Summary: The study revealed that during gastric digestion, fat globules in raw and pasteurized whole milks are initially trapped within curds, but are gradually released as digestion progresses. The release of fat globules from curds is dependent on the breakdown of the protein matrix, providing insights into controlled delivery of nutrients.
