Preparation of a superhydrophilic SiO2 nanoparticles coated chitosan-sodium phytate film by a simple ethanol soaking process

Mengting Yu et al.

Summary: This study developed a simple method to prepare a superhydrophilic, transparent, and biodegradable composite film by soaking a chitosan-sodium phytate film in an ethanol solution of SiO2 nanoparticles. The coated film showed reduced water contact angle, improved oxygen transmission rate, and enhanced mechanical properties, indicating its potential for superhydrophilic materials production. The method is easy to carry out and has practical implications for environmentally friendly food packaging materials.

A mechanistic model to study the effect of the cell wall on starch digestion in intact cotyledon cells

Ana M. Rovalino-Cordova et al.

Summary: This study used a mathematical model to explain the role of the cell wall in restricting starch digestibility in beans, identifying key mechanisms that limit starch hydrolysis. The model was validated under controlled laboratory conditions and provides new insights into the digestibility of starch and other macronutrients in complex food matrices.

Extrusion pregelatinization improves texture, viscoelasticity and in vitro starch digestibility of mango and amaranth flours

Daniel E. Garcia-Valle et al.

Summary: The study investigated the impact of extruding pregelatinization on amaranth and mango flours, revealing significant changes in the characteristics of the flours, such as disruption of starch structure and alterations in starch digestibility. Amaranth flour, with higher protein content, demonstrated higher levels of slowly digestible starch, potentially due to its ability to form complexes with starch. Extrusion was found to have a strong effect on the properties of both flours, as indicated by principal component analysis.

Effect of processing and variety on starch digestibility and glycemic index of popular foods made from cassava (Manihot esculenta)

Toluwalope Emmanuel Eyinla et al.

Summary: The study found that although there was no significant difference in the glycemic properties of the cassava varieties studied, processing any variety into fufu or gari dough distinctly impacted the levels of resistant starch (RS), rapidly digestible starch (RDS), and predicted glycemic index (pGI). Specifically, fufu had the highest range of RS (1.1-2.1 g/100 g), while gari dough had the highest RDS (1.1-1.4 g/100 g) and pGI (54-67).

Pea cell wall integrity controls the starch and protein digestion properties in the INFOGEST in vitro simulation

Shahid Ahmed Junejo et al.

Summary: The study revealed that the cell wall integrity of intact pea cells can modulate the digestion properties of starch and protein in vitro, potentially leading to lower glycemic response and providing opportunities for designing health food products.

Physicochemical Properties Comparative Analysis of Corn Starch and Cassava Starch, and Comparative Analysis as Adhesive

Xiaojian Chen et al.

Summary: The study found that there are differences in morphology and properties between corn starch and cassava starch. Cassava starch had a stronger and wider hydroxyl peak, slightly higher oxygen content and slightly lower carbon content, while corn starch granules were more irregular and sharper, while cassava starch granules were more uniform, regular, and round.
