Application of the curcumin-mediated photodynamic inactivation for preserving the storage quality of salmon contaminated with L. monocytogenes

Summary: Curcumin-mediated blue light-emitting diode photodynamic inactivation showed to slow down Listeria monocytogenes growth on salmon stored at 25 degrees Celsius, preserving nutritional value, texture and sensory properties. Effect of sodium alginate-agar coating containing ginger essential oil on the shelf life and quality of beef

Summary: Edible coatings based on agar/sodium alginate (AS) and AS containing ginger essential oil (AS + GEO) were prepared to study their effects on the quality and shelf-life of fresh beef during refrigerated storage. The results showed that both coatings could extend the shelf life of fresh beef and inhibit oxidation, with AS + GEO coating showing better performance and improved sensory attributes.

Six packaging conditions were evaluated at laboratory scale, and data from consumer studies was used to objectively determine product shelf-life. Different packaging alternatives were explored and the results are directly applicable to minimally processed industry based on consumer perception.
