Characterization of the aroma profiles of oolong tea made from three tea cultivars by both GC-MS and GC-IMS

Summary: This study investigated the aroma characteristics of oolong teas made from Shuixian, Huangmeigui, and Zimudan tea cultivars. Huangmeigui and Zimudan teas had more volatile compounds and stronger floral aroma compared to Shuixian tea, with unique notes of popcorn, creamy, and caramel-like odors. The use of GC-IMS allowed the identification of additional volatile compounds, highlighting the benefits of a combined method for understanding the impact of cultivars on tea aroma profiles.

Rapid authentication of Chinese oolong teas using atmospheric solids analysis probe-mass spectrometry (ASAP-MS) combined with supervised pattern recognition models

Summary: Ambient mass spectrometry (AMS) is a powerful tool for studying food authenticity and traceability. This study demonstrated the potential of using an AMS technique called atmospheric solids analysis probe - mass spectrometry (ASAP-MS) to authenticate Chinese oolong teas and detect adulteration of Anxi Tieguanyin. The results showed that ASAP-MS combined with appropriate data analysis models can achieve high classification accuracy and detection sensitivity, making it a rapid and efficient method for quality control of oolong teas.

Metabolomic characterization of 5 native Peruvian chili peppers (Capsicum spp.) as a tool for species discrimination

In this research, an untargeted metabolomic approach was used to distinguish three native chili pepper species and identify biomarkers. By using UHPLC-HRMS and multivariate data analysis, the study successfully discriminated the species and identified 15 biomarkers, mainly flavonoids.
