Structural and emulsion stabilization comparison of four gelatins from two freshwater and two marine fish skins

Lili Yang et al.

Summary: This study compared the properties of different fish skin gelatins, and found that their gel strength is related to molecular weight and subunit content. Emulsion stability is closely related to protein chemical composition and secondary structure, providing important references for the comprehensive utilization of aquatic by-products in the gelatin industry.

A New Type of Biological Glue Derived from Fish Swim Bladder: Outstanding Adhesion and Surgical Applications

Lingling Xiao et al.

Summary: The study focuses on utilizing fish swim bladder as raw material to produce protein-based adhesives with robust adhesion. The resulting fish swim bladder glue (FSG) shows excellent lap shear strength on various hard substrates, especially wood and glass, surpassing many commercial adhesives and artificial protein-based adhesives. Moreover, FSG also demonstrates low cytotoxicity, minimal inflammatory response, and considerable adhesion on soft tissues, making it suitable for biomedical applications.

Incorporation of salmon bone gelatine with chitosan, gallic acid and clove oil as edible coating for the cold storage of fresh salmon fillet

Yun Xiong et al.

Summary: Edible coating made from salmon bone gelatine has shown to be effective in preserving fresh salmon fillet by inhibiting oxidation, discoloration, and microbial growth. Combining gelatine with chitosan, gallic acid, and clove oil enhances the antioxidant and antimicrobial properties of the coating, prolonging the shelf life of salmon fillet for at least 5 days.

Silver carp scale gelatins for the stabilization of fish oil-loaded emulsions

Jiamin Xu et al.

Summary: In this study, three types of silver carp scale gelatins were extracted and characterized. Different extraction methods resulted in variations in the molecular weight distribution and functional properties of the gelatins. Gelatin extracted by acetic acid showed the highest water-holding and fat-binding capacities, while gelatin extracted by pepsin enzyme had the lowest emulsion stability. This research provides valuable insights into the relationship between gelatin structure and function, and may contribute to the comprehensive utilization of aquatic products.
