Mutual influence of polyphenols andLactobacillusspp. bacteria in food: a review

Lidia Piekarska-Radzik et al.

Summary: This paper discusses the impact of polyphenols on microorganisms in the human gastrointestinal tract and common food contaminants. Polyphenols modulate microbial growth, influence the microbiota in the gut, and have both antioxidant and pro-oxidant properties. Combining polyphenols withLactobacillusbacteria can protect food products against undesirable microorganisms and positively affect human health. The paper also explores the genetic changes inLactobacillusbacteria under the influence of polyphenols and their enzymatic abilities.

Effect of inulin and fructooligosaccharide supplementation on the growth and survival of Lactobacillus casei in model sugar systems

Priyanka Parhi et al.

Summary: This study investigated the effects of inulin or FOS supplementation at different concentrations in various sugar systems on the growth and survival of Lactobacillus casei. The results suggested that lactose was the most suitable sugar for supplementation, with FOS showing better performance in the lactose system and inulin being more effective in the glucose and fructose systems. These findings provide valuable insights for the application of prebiotic supplementation with L. casei in the food industry.

Retention of flavonols in onions after osmotic dehydration

Katarzyna Grzelak-Blaszczyk et al.

Summary: The study found that different onion varieties exhibit varying levels of polyphenol retention and migration during osmotic dehydration, with Hystore variety losing the most water. The degradation of polyphenols also differed among the varieties over time.
