UV-C Treatment of Apple and Grape Juices by Modified UV-C Reactor Based on Dean Vortex Technology: Microbial, Physicochemical and Sensorial Parameters Evaluation

Summary: A laboratory-scale UV-C reactor based on Dean vortex technology was designed and tested for microbial inactivation in apple and red grape juices, showing significant reductions in Lactobacillus plantarum and Saccharomyces cerevisiae. Furthermore, the UV-C treatment increased antioxidant activity and total phenolic content in apple juice, with no significant effect on grape juice.UV-C treatment also had an impact on the color of the juices, but did not change their quality attributes.
