Optimization of Virgin Olive Oil Yield and Quality Applying Nonthermal Processing

V Andreou et al.

Summary: The objective of this study was to optimize and compare the potential benefits of pulsed electric fields (PEF) and high pressure processing (HPP) on the yield, quality, and oxidative stability of olive oil. Various PEF and HPP pretreatments and different malaxation conditions were studied, and the results showed that PEF and HPP pretreatments increased the olive oil yield and oxidative stability. The combination of pretreatment with low malaxation temperature also improved the sensory characteristics of the olive oil.

Ceratonia siliqua L. kibbles, seeds and leaves as a source of volatile bioactive compounds for antioxidant food biopackaging applications

Lidia Ait Ouahioune et al.

Summary: Macerates of kibbles, seeds and leaves of Ceratonia siliqua L. were prepared and analysed for their bioactive volatile compounds, antioxidant capacity, antimicrobial properties, and potential use in biopackaging. The study found that the seeds macerates had stronger antioxidant capacity, but weak antibacterial activity. The macerates were incorporated into a cellulose polymer adhesive to create a biopackaging film, which showed promising antioxidant activity and no migration of volatile or non-volatile compounds. The study suggests the potential for future production of active biopackaging at an industrial scale.

Valorization of carob by-product for producing an added value powder: characterization and incorporation into Halva formulation

Leila Tounsi et al.

Summary: This study proposes a solution for the valorization of by-products generated from carob molasses processing. By incorporating dried carob by-product into Halva, a new value-added product (Halva with carob powder) can be produced. The study characterizes carob powder and optimizes the percentage of carob powder in Halva formulation. The new confectionary product can be considered as a promising nutritious and healthy foodstuff to consumers.

An overview of conventional and emerging techniques of roasting: Effect on food bioactive signatures

N. U. Sruthi et al.

Summary: Roasting is a food processing technique that improves food quality by utilizing the principle of heating. Emerging roasting techniques, including microwave roasting and infrared hot-air roasting, are able to effectively roast various foods without compromising their nutritional quality. High-temperature roasting affects the physicochemical and structural properties of food, but novel techniques have minimal destructive impacts compared to traditional processes, requiring further research to establish their potential in producing safe, high-quality foods.

Effect of Roasting on the Antioxidant Activity, Phenolic Composition, and Nutritional Quality of Pumpkin (Cucurbita pepo L.) Seeds

Mengyao Peng et al.

Summary: The study investigated the influence of roasting on the nutritional composition of pumpkin seeds, finding that total phenolic compounds, total flavonoids content, and total antioxidant capacity increased with higher roasting temperatures. However, the composition and content of fatty acids did not change significantly after roasting. The optimal roasting temperature for obtaining protein with better nutritional quality was found to be 160 degrees Celsius.
