Hydrophobicity Enhances the Formation of Protein-Stabilized Foams

Summary: This study investigates the relationship between the exposed hydrophobicity and foam ability and stability using lysozyme variants with altered hydrophobicity. The results show that increasing hydrophobicity enhances foam ability and adsorption rate constant, but at higher relative exposed hydrophobicity, they become independent. Foam stability is affected by the initial foam structure, but in the protein-rich regime, it is not affected by hydrophobicity. The study confirms the similarity between protein-stabilized foams and emulsions and suggests that the model proposed for emulsions can be used to predict foam properties.

Relationship between air-water interfacial dilational viscoelasticity and foam property in aqueous solutions of sodium alkylsulfates with different hydrocarbon chains

Summary: The study found that the alkyl chain structure plays an important role in the rheological properties of sodium alkylsulfates, with longer alkyl chains having a greater impact on interfacial dilational viscoelasticity. The frequency dependence of interfacial dilational viscoelasticity is mainly controlled by the diffusion of surfactants. The relationship between interfacial dilational viscoelasticity and foam stability was observed under certain conditions.

Protein Transport upon Advection at the Air/Water Interface: When Charge Matters

Summary: The presence of advection flow during protein adsorption at a free air-water interface can lead to different kinetics and interfacial structures of the adsorbed layer, depending on the net charge and type of proteins involved. The combination of a positive charge of proteins and the presence of advection flow induces the formation of interfacial multilayers, while negatively charged proteins tend to form monolayers, regardless of the presence of advection flow. An advection/diffusion model alone cannot accurately describe the adsorption kinetics of multilayers, suggesting the need for further research to understand the mechanism underlying the formation of multilayers.

Impact of denaturing agents on surface properties of myoglobin solutions

Summary: The addition of denaturants strongly affects the surface properties of aqueous myoglobin solutions, leading to different effects compared to mixed solutions with other globular proteins. The dynamic surface elasticity of myoglobin solutions with GuHCl shows at least two adsorption steps at denaturant concentrations higher than 1 M, a rapidly increasing elasticity followed by a slower growth to abnormally high values. Protein aggregation in the surface layer may contribute to the higher surface elasticity in myoglobin/GuHCl solutions, with evidence supported by ellipsometry and Brewster angle microscopy. Surfactant addition to protein solutions results in the formation of myoglobin/surfactant complexes, displaying multi-step adsorption kinetics different from solutions of other globular proteins mixed with ionic surfactants. Ellipsometry and infrared reflection-absorption spectroscopy allow tracking the adsorption and displacement of the complexes at high surfactant concentrations.

Summary: This study investigates the adsorption behavior of bovine serum albumin (BSA) at liquid/gas and liquid/liquid interfaces under different pH conditions, as well as its impact on the motion of single bubbles/droplets and liquid film drainage. The research also compares the stabilization mechanism of foam and emulsion films by BSA with that of sodium lauryl sulfate, revealing similarities and differences in their dynamics under dynamic conditions.
