Identification and characterization of metal-chelating bioenhancer peptide derived from fermented Citrullus lanatus seed milk

Summary: In this study, a bioactive peptide with metal-chelating and antioxidant abilities was derived from fermented Citrullus lanatus seed milk. The peptide showed the ability to chelate multiple divalent cations and exhibited a high DPPH free radical scavenging activity. Interaction between the peptide and metal ions was analyzed and stable metal-peptide complexes were observed. In vitro analysis demonstrated that the peptide increased metal bioavailability and was not influenced by a dietary inhibitor. LC-MS analysis revealed the molecular mass and amino acid composition of the peptide. This study suggests that fermented C. lanatus seed milk could serve as a potential functional food with bioenhancer peptides.

Effect of selenium biofortification on bioactive compounds and antioxidant activity in germinated black soybean

Summary: Biofortification with inorganic selenium increased the contents of selenium, total sugar, vitamin C, gamma-aminobutyric acid, total polyphenols, and total flavonoids in germinated black soybeans. However, it decreased the contents of soluble protein, fat, and reducing sugar. The antioxidant activity of the selenium biofortified black soybeans positively correlated with phenolic substances accumulation. Principal component analysis showed significant differences between the biofortified black soybeans and regular black soybeans.
