Fiber Preparation from Micronized Oat By-Products: Antioxidant Properties and Interactions between Bioactive Compounds

Summary: This study investigated the possibility of utilizing oat by-products for fiber preparation. Micronized oat husk and oat bran were used to prepare a novel product rich in fiber and with enhanced antioxidant properties. The results showed that oat husk contained a higher total phenolic acid content compared to oat bran, and both oat husk and oat bran can be used for preparing fiber with enhanced antioxidant properties.

Chemical, antioxidative, and sensory characteristics of wheat bread partially substituted with black chokeberry (Aronia melanocarpa L.) powder

Summary: This study demonstrated that chokeberry powder can replace up to 10% of wheat flour, providing a significant health improvement as an acceptable functional product. Bread samples with 10% chokeberry powder had the highest ratio of cellulose, ash (minerals), total phenolics, flavonoids, and antioxidant activity, while the best sensory characteristics were obtained with 5% substituted flour with chokeberry powder. The new nutritive bread has an increased level of active materials with positive potential for human health.

The influence of the extrusion process on the nutritional composition, physical properties and storage stability of black chokeberry pomaces

Summary: The study found that the extrusion process reduces anthocyanins and fiber content in black chokeberry pomaces, while increasing simple sugars. Using a state diagram and water activity concepts, it was determined that the products retain crispiness under moderate humidity conditions, but must be protected against humidity when stored at room temperature based on glass transition concept.

Assessment of Chokeberry Powders Quality Obtained Using an Innovative Fluidized-Bed Jet Milling and Drying Method with Pre-Drying Compared with Convection Drying

Summary: This study focused on obtaining powders with desired granulation from sticky fruit berries using a combination of fluidized-bed jet milling and drying (FBJD) of pre-dried fruit by convection drying (CD). Pre-drying fruit at temperatures between 60-70 degrees Celsius resulted in higher vitamin C and polyphenolic content, as well as greater antioxidant properties. The FBJD method combined with CD pre-drying proved superior to just using the CD method, with a shorter drying time and higher preservation of vitamin C, total polyphenol content, and antioxidant activity.
