Applying Cold Atmospheric Plasma to Preserve the Postharvest Qualities of Winter Jujube (Ziziphus jujuba Mill. cv. Dongzao) During Cold Storage

Summary: Winter jujube, a popular horticultural fruit, is highly perishable due to microbial contamination. This study investigated the effect of cold atmospheric plasma (CAP) on the physicochemical and biochemical changes in jujube during storage. The results showed that CAP treatment delayed ripening, inhibited bacterial growth, and improved gene expression related to phenolic biosynthesis. The 20-min CAP treatment was particularly effective in maintaining phenolic content, antioxidant activity, and reducing oxidative damage.
