A holistic approach to food fraud vulnerability assessment

Summary: The increase in fraudulent incidents has shifted the focus of investigating food fraud from risk mitigation to vulnerability reduction. This study developed a Bayesian Network approach to analyze food fraud vulnerability factors based on the Decernis food fraud database incidents, identifying key predictors such as the country of origin, food product types, types of adulterants, and the country of detection. The developed model helps authorities and quality assurance agencies assess fraud vulnerability for a variety of food products.

Feeding growing button mushrooms: The role of substrate mycelium to feed the first two flushes

Patterns of changes in the mineral composition of Agaricus bisporus cultivated in Poland between 1977 and 2020

Differentiation between species and regional origin of fresh and freeze-dried truffles according to their volatile profiles

Summary: This study aimed to determine whether freeze-dried truffles of different species and regional origins can be grouped based on their VOC profiles. The results showed that VOC profiles of freeze-dried truffles are significantly altered compared to fresh truffles, but species-specific VOC transformations were observed during freeze-drying. Multivariate discriminant analysis successfully distinguished between different truffle species, supporting its applicability in food fraud detection. Samples from different truffle hunting locations also showed potential differences in VOC profiles indicating regional origin, requiring further investigation for improved cross-validation results.

Circular alternatives to peat in growing media: A microbiome perspective

Summary: This study explores the microbial composition, interactions, and activity of four alternative substrates to replace peat in mushroom growing media. It demonstrates that agricultural residue streams, peat-moss farmed in degraded peatlands, and spent casing soil recycled from previous cultivation cycles can be viable peat alternatives. Pre-treatments such as acidification and steaming significantly affect the microbiome and the performance of the peat-reduced growing media. Furthermore, trade-offs exist between productivity and disease pressure, influenced by the microbial composition of the growing media.

Supercritical CO2 extraction method of aromatic compounds from truffles

Summary: Supercritical fluid extraction with CO2 was used to obtain natural truffle aroma from black truffle, with optimal conditions being 30 MPa pressure and 3 hours extraction time. Addition of grapeseed oil enhanced trapping key truffle aromatic compounds, such as 2,3-butanodione, 2-methyl-1-butanol, octanal, and dimethyl disulphide. Olfactometry study revealed ethyl pentanoate, 1-hexen-3-one, and ethyl hexanoate as the main compounds in the extracts samples.

Aroma and flavor profile of raw and roasted Agaricus bisporus mushrooms using a panel trained with aroma chemicals
