Extraction, fatty acid profile, phytochemical composition and antioxidant activities of fixed oils from spices belonging to Apiaceae and Lamiaceae family

Palak Daga et al.

Summary: This study aimed to extract fixed oils from 13 Indian spices and analyze their fatty acid composition, antioxidant activities, and phytochemical profiles. Among the spices studied, Ferula assa-foetida had the highest amount of fixed oil. GC-MS profiling revealed the presence of major fatty acids in the fixed oils. The study also identified certain spice fixed oils as important sources of bioactive compounds with high antioxidant properties.
